KENYA
Mukimo with Stinging Nettles
Every culture has its own cuisine, and Kenya is no exception. Although the dishes may vary from tribe to tribe, here is one example of a unique food.
Mukimo, a Kikuyu delicacy, is produced by boiling grains, potatoes and green vegetables and then mashing everything together. The stinging nettle, also known as hatha or thabai, is one of the green vegetables being used. Because of the formic acid and histamine in the plant’s leaves, people get rashes when they come into contact with them and the skin can itch for many hours afterwards. Yet when cooked, this stinging plant is really delicious!
