Natural Farming & Local Gastronomy – A Carob experience in Madaba
Tala and Rakan have over 17 years of practical experience in the nature-based tourism industry in Jordan. They are the founders of Carob – a holistic grassroot initiative aiming to reimagine the way food is produced and consumed in Jordan.
Dive into the world of abundance on a tour around a family farm to show how the company is working with nature to combat climate change and transfer a dry piece of land into a diverse food production system.
Learn all about the magic of healthy soil, fungi, forest trees and permaculture design, what it takes to harvest rainwater, make compost, produce your own nutritious food and establish a resilient ecosystem to live within.
As you make your way into the farm, you’ll be welcomed with homemade cookies and a cup of herbal tea. Then sit under a canopy of Allepo pine trees for an introductory chat. Hear all about the farming project and how the research and practice came to be. Take a walk around the farms’ various components and hear about the ideas and innovations that are being devised in order to design in harmony with nature and be able to produce clean and natural food with minimal input.
A 10 minute drive from the farm is the Carob house. Located at the centre of the ancient mosaic town of Madaba, this 1930s house used to be the family’s residence and where their first child was born. The house has been renovated to host a farm-to-table café and community kitchen, where the story of healthy soil and nourishing food continues to be told and celebrated.
After exploring the house, sit around the cozy communal table and enjoy an artisanal 5-course meal. Each dish here is original and cooked using locally sourced ingredients. It has cultural relevance and tells a story that will be shared with you as the meal is enjoyed.
